Ingredients
- 2 pounds American Wagyu stew beef, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 carrots, sliced

- 4 medium potatoes, diced
- 4 cups beef broth
- 1 cup red wine (optional)
- 2 tablespoons tomato paste
- 2 teaspoons dried thyme
- 2 teaspoons dried rosemary
- 2 bay leaves
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped (for garnish)

Instructions

1. **Brown the Meat**:
- In a large pot or Dutch oven, heat the olive oil over medium-high heat.
- Add the Wagyu stew beef in batches, browning on all sides. Remove the meat and set it aside.

- In the same pot, add the diced onion and cook until translucent (about 5 minutes).
